I know in the books Mombi was the witch of the North but on the show I think she'll be the witch of the South. She was creating witches for a war against Oz with Glinda rather by choice or force and she saw something special in Tip(I think she was a fairy in the books). So she turned Tip into a boy to try and protect her from Glinda. Maybe fairies will be a weakness to witches or magic magnifier. Just a theory.

Read an interesting theory today that Lady Ev is the cowardly lion. She wears a mask not because of a physical problem, but due to anxiety as she has to rule the kingdom after losing her mother and the mental health of her father. Not sure if I believe this theory or not but it's definitely something to think about.

I think a witch can be killed by another witch (using magic, a sword, a gun, whatever) or by the Beast Forever, since it drowned many powerful witches when it last came. Dr. Jane Andrews, who was brought to Oz with Frank and Karen, is the same Jane who made Jack the Tinman in Ev. And while the Wizard apparently claims that those stone giants aka Eternal Warriors are not magical, they seem to have something to do with Nahara, the wife of Ojo from the Munja'kin village. She is obviously a witch and can animate stone into moving figures (as she did when showing Frank her magic). She might have created the Warriors herself, but when they vanquished the Beast, the Wizard made East to lock Nahara in the Prison of the Abject. That's why the giants' power is locked there and the Wizard can't animate them again – it's only Nahara who can control them and without East, no one can get her out of the Prison to bring the giants back to life. But since they wouldn't be of any help in defeating the Beast this time, Nahara's imprisonment bothers no one save her husband.

Ojos wife demonstrated her power over stone and rocks, formed a man that's similar to the Wizards stone Warriors, perhaps she controlled them for the wizard and then he had her put in the abject prison to keep her quiet.
